CEDAR PLANK TERIYAKI SALMON

This week in the BBQ Authority Test Kitchen, we gave Meat Church's beloved salmon recipe a try. SPOILER ALERT: WE LOVED IT! The salmon came out perfectly cooked with the right amount of sweetness. A hint of maple syrup and teriyaki made for a completely addicting flavor and aroma. The sweetness from the marinade and maple syrup paired well with the subtle smokiness of the cedar planks. What we would change about this recipe: absolutely nothing. If you're into mouthwatering meals, this one is for you.

DIRECTIONS

  1. Brine the salmon by pouring the teriyaki over the filets and allow them to marinade in the refrigerator for 2 hours.
  2. Prepare your grill or smoker to a temperature of 275 degrees.
  3. After 2 hours, remove salmon from the brine, rinse off and pat dry. Season all sides of the fish with your choice of Meat Church Rub.
  4. Place the filets on the cedar grilling planks and place on grill or smoker.
  5. While the salmon is smoking, melt the butter and and mix well with maple syrup.
  6. Once the salmon filets reach an internal temperature of 115 degrees, pour the butter and syrup mixture over the top.
  7. Continue to cook the fish until it reaches an internal temperature of 125 degrees. This will take roughly 35-40 minutes when cooking at 275 degrees.
  8. Carefully remove fish from cedar planks and allow to rest for 10 minutes. Enjoy!

A few things worth noting:

Before starting, we made sure to pre-soak the cedar planks for an hour to ensure a consistent burn. We love using the Napoleon Cedar Planks, because they are 100% untreated wood. These planks add just the right amount of flavor and are thicker than most others on the market. When done using them, be sure to rinse off any residue (no soap!). Napoleon recommends reusing them until they become 50% charred. Additionally, to cook our salmon, we opted for the KANDO Gear K480 Pellet Grill. This beauty was perfect for the job! KANDO (pronounced 'can do') Gear uses a Fireboard 2 adaptive control system, so achieving and maintaining the perfect temperature was a breeze. With ample cooking space, the K480 made fitting multiple cedar planks on the grill at once effortless.
